The Flip Flop is a half white half whole wheat bread. We utilize a pre-ferment or poolish to enhance the flavor of the white flour and to lesson the amount of commercial yeast. The wheat flour is pre-soaked to get some enzyme action going and bring out the natural flavor of wheat without using any sweeteners or fats. It’s about a 24 hour process from start to finish and we think the extra time is worth it. We hope you do too!
