Brake Bread Overview

Brake Bread is a neighborhood bakery on West Seventh Street in St. Paul MN that uses bread and bikes to build community. We are open Tuesday through Saturday as a retail bakery, handle a few wholesale accounts, and have four days of bicycle delivery to bread subscribers throughout St. Paul. We use organic grains to make naturally leavened breads and simple pastries. We are tiny and we believe that good things take time. Working at Brake Bread is the perfect spot for folks who want to make a difference by connecting humans with each other and with the bakers, millers, and farmers that are making the food they eat.

Job Overview

The morning baker is the first one in each morning and is responsible for the final proof and baking of pastries and bread. About 60% of the shift is working with the oven. In addition, you will be feeding the starter, scaling ingredients for the morning mix and preparing various sweet doughs and cookies. There may be some scaling and shaping of bread towards the end of each shift. This position holds to a tight schedule and requires neat and efficient multi-tasking with a positive attitude, all while baking with predictable consistency.
