We always look forward to fresh-crop coffees from Burundi each year. This is an often under-appreciated region for specialty coffee. It offers some true gems, and we love to highlight these great coffees!
Coffee from Burundi is typically grown by smallholder farmers who sell their freshly-picked cherries to a nearby washing station for further processing. The selection we have comes from a cooperatively owned washing station, Twaranyuzwe, that was founded in 2013.
After sorting the cherries for quality, they begin processing. First, the coffee is depulped and then dry-fermented for 12 hours. After that, it is wet-fermented for 24 hours and then soaked for another 12 hours in fresh water. Once that is done, the coffee is transferred to raised drying beds that are rotated regularly for consistent drying. Throughout this whole process, the coffee continues to be sorted.
The result of all this attention to detail is a sweet and heavy-bodied coffee with subtle flavors of caramel pecan roll, browned butter and dried apricot. This coffee is cozy and absolutely delicious!
